|2 large egg yolks||1 1/2 cups whole milk|
|2 teaspoons baking powder||1 1/4 cups all-purpose flour|
|1/4 cup unsweetened cocoa powder||4 tablespoons unsalted butter, melted|
|2 large egg whites||2 tablespoons light brown sugar|
Heat your waffle iron.
In a medium bowl, combine the egg yolks, milk, baking powder, flour, cocoa powder and melted butter. Mix until almost smooth.
With a whisk or a mixer with a whisk attachment, whip the egg whites until stiff peaks form; then add the brown sugar and continue whipping until stiff.
Fold the whipped egg whites into the batter.
Pour batter onto waffle iron. Cook until crispy.
